Almond Flour Banana Bread
Happy New Year! We're about to reference New Year Resolutions, because that's the right thing to do, right? Now, our thing here at Elsterware is baking, and sweets, and savory concoctions. But, we know that there are a lot of you out there who are trying to cut out sweets, sugar, gluten, and all that naughtiness. We are too! So, we needed a favorite of ours to stick by our side, but we needed to feel a little better about it.
We've posted a banana bread on here before, but this time we wanted to try out almond flour! So, we found this on Live Simply and were so happy with how simple it was, with all the ingredients we already had!
When we tried this recipe, we only had 2 bananas, not 3 (simply because we only had 2), and we subbed honey out for agave (and used a little less than half a cup, since it's so sweet).
Even with one less banana, this bread was pretty dang incredible. It was SO moist, deliciously sweet, and we felt good about eating it each morning.
- 2 1/2 cups blanched almond flour
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp baking soda
- 3 eggs
- 1/2 cup honey
- 1/4 cup plain whole milk yogurt
- 3 bananas ripe, mashed
- 1 tsp pure vanilla extract
- 1/4 cup walnuts chopped
Preheat the oven to 350ºF.
Grease the bottom of your Elsterware Springform Pan with plenty of butter or coconut oil.
In a large bowl mix together the dry ingredients: almond flour, cinnamon, nutmeg, salt, and baking soda.
In a medium size bowl, whisk together the eggs. Add in the honey, yogurt, mashed bananas, and vanilla. Whisk together until combined.
Stir the wet ingredients into the dry ingredients until combined. Fold in the chopped walnuts.
Pour the batter into pan and bake for 40-50 minutes until the center is firm.
Allow to cool. Remove from pan.
Slice and enjoy with lots of pastured butter!
