Sausage, Spinach, and Sweet Potato Quiche

It was SO popular when we shared her post, that we had to ask her for her recipe. And let me tell you, it really is worth the popularity. It's perfect for Sunday brunch (or any day of the week, really)!
1 sweet potato
1 pound of ground sausage
1 box (10 ounces) of frozen spinach (defrosted)
1/4 cup almond milk
1/4 teaspoon nutmeg
salt & pepper
crushed red pepper
PREHEAT OVEN TO 400°F. GREASE THE SIDES AND BOTTOM OF YOUR 10-INCH ELSTERWARE SPRINGFORM PAN WITH COOKING SPRAY.
SAUTE GROUND SAUSAGE UNTIL JUST COOKED.
PEEL & SHRED SWEET POTATO
DRAIN DEFROSTED SPINACH AND MIX TOGETHER WITH COOKED SAUSAGE & SHREDDED SWEET POTATO.
ADD IN EGGS, ALMOND MILK, AND SPICES.
POUR INTO PREPARED SPRINGFORM PAN AND COOK FOR 45 MINUTES.
COVER WITH ALUMINUM FOIL AND COOK FOR AN ADDITIONAL 10 MINUTES.
REMOVE FROM OVEN, UNCOVER, AND LET STAND FOR 10 MINUTES, THEN ENJOY!
